All you need are tortillas, cheese, and veggies of your choice. At our house, we go with onions, red and green peppers, and tomatoes, but you can add whatever you like -- even a little chopped spinach! Add a little guacamole and sour cream, fill in with some refried beans (vegetarian of course), and you've got a delicious and quick meat-free Friday meal!
