Meat-free Friday -- Watercress soup

It's Good Friday, which means soup and bread for many folks.  We enjoyed this Watercress Soup recently; I thought it would be a perfect Good Friday meal.  I made no changes to the recipe, so I'm just providing the link.  Enjoy and Happy Easter!
